Carol Banahan is the founder of Carol’s Stock Market, the only traditional, all-natural, homemade stock available in Ireland. Born and raised in Dublin, she spent 25 years in Canada brokering million-dollar deals as a stock trader. Carol has always made her own stock, and when she and her husband Neil returned home to Ireland three years ago she was amazed to find nobody was selling natural stock the way they did in Canada. Convinced there was a gap in the market, she began making her own stock and selling it around the whole country.
In autumn 2016 Carol became the first client at Foodovation, the food development centre at the North West Regional College in Derry, where she was able to turn her dream of making and selling stock into a business. Her determination was rewarded in March 2017, when Carol’s Stock Market was shortlisted in the Small Product category of the Northern Ireland Food and Drink Awards. Carol’s Stock Market has gone on to win a gold star in the Great Taste Awards along with recently Winning a Blas NahEireann Chef's Choice 2017.
Many top chefs, including Rachel Allen, Brian McDermott, Paula McIntyre and Brian Tucker, love to cook with Carol’s stock. You can meet Carol and try everything from curries to cocktails made with her stock at food festivals including Slow Food NI (October 2016) Legenderry (March 2017), Balmoral (May 2017) ,Taste of Dublin (June 2017) and various other food festivals around Derry and Inishowen.
